An easy, healthy and inexpensive meal...

I had the day off today, so I decided to make the most of it and be Mrs. Domestic...I took the dogs to the vet for the annual shots, picked clothes up from the cleaners, went to Wal-Mart for a few essentials and groceries, finished laundry, ironed and prepared meals for this week. I made a yummy tuna salad for lunches this week, my famous "Min-Pop" Pies (a delicious chicken pot pie recipe from the Williams-Sonoma Bride & Groom First and Forever cookbook) for dinner tonight and one night next week (the recipe makes 4 pot pies, so I always freeze 2) and a very delicious and healthy pasta dish, which has become a staple around our house lately. This recipe is so good, so easy and makes a ton (it yeilds about 6-8 servings) so I thought I would share it with the blogger world. It doesn't have a formal name....so, I'll go ahead and name it now...

Mindy's (with the help of Karen to spice it up a bit) Veggie and Turkey Pasta Paradise....

Ingredients:

1 lb. of lean, ground turkey
1 White Onion, chopped
2-3 Cloves of Garlic, chopped
1 Yellow Squash, chopped
1 Green Squash, chopped
1 Bag of baby spinach, chopped
1 Can of Hunt's Fire Roasted Tomatoes Diced
1 29 oz Can of Hunt's Tomato Sauce
Wheat Pasta (or whatever kind of pasta you prefer)
Garlic Salt
Pepper
Ground Oregano
Basil
Olive Oil

Directions:

Brown turkey in one skillet and set aside.

In another large skillet, sautee the chopped onions and garlic in olive oil for about 10 minutes on medium heat. Add the chopped squash and fire roasted tomatoes and season until desired with pepper and garlic salt. Cover and cook for about 10 minutes. Add pasta sauce, chopped spinach and ground turkey and season until desired with oregano, basil, pepper and more garlic salt. Let simmer 10-20 minutes on medium-low stirring occasionally. If you like a little spice, add some ground red pepper or red pepper flakes.

While the sauce is simmering, cook pasta.

Serve pasta sauce over pasta and add some grated parmesan cheese on top if you like. Enjoy!! It's a great meal to make on a Sunday afternoon when you have a busy week a head of you....Josh and I can eat on this for 3 nights at least! I would allow an hour to prepare from start to finish.

First Day of School!

It's hard to believe that this little cutie started 2nd grade...

And that this little lover boy started kindergarten today!

They are so grown up....and I am by far the proudest aunt ever! They both were champs this morning and handled the first day of school like pros! Here are few pics from the big day...

A is for Agness...



Meet the "newest addition" to our family, 9 year old Agness Banda...Agness is 1 of 60 children that now live at Family Legacy's Tree of Life Children's Village! 4 of the 25 community homes at The Village officially opened this summer, providing a haven of hope and light to the orphans of Zambia, Africa. Josh and I are "sponsoring" Agness, allowing her to live full time at The Village. Our sponsorship provides Agness with the very best care...amazing Godly house moms, 3 nutritious meals and 2 snacks per day, full medical care from the best medical establishment in Lusaka along with health insurance, clothes, a great education 7 hours a day, salaries for the teachers (who are experienced and extremely well-qualified), one-on-one counseling for an hour each week, 17 security staff to make sure the children are safe 24-7, and a male and a female pastor who both serve full-time to help lead and disciple the children. How cool is that?!! Josh met Agness for the first time this summer and immediately fell in love with her. I can't wait to meet her next time I'm in Zambia! She is just a doll! Meet me in St. Louis...

I'm back from St. Louis in one piece! We had a great trip to the "Show Me State" and got Caroline all settled into her new life there. Here are some pics from the past few days....

Lucy took the wheel for the first shift....I was a little nervous to ride shot gun, but Lucy reassured me that driving large vehicles was in her blood...

We just had to stop...

Trying to look tough....but I think I'm achieving more of a constipated look here than tough.

After 5 stops (maybe more....we stopped counting), we made it to St. Louis in a little under 12 hours. Everyone took there turn at driving the U-Haul....thank you Jesus for getting us there safely!

After working hard on unpacking all of Caroline's things, we treated ourselves to a Cardinals game on Wednesday evening. Lesson learned....never go to a Cardinals game without wearing red. Karen and I in front of Busch Stadium....

Lucy had to fly back to Dallas on Thursday evening for work, so we spent the day sighting in St. Louis. Our first stop...Lunch at Blueberry Hill. The fried ravioli was delicious!

After lunch we hit up the City Museum....this place is by far the most creative and interesting place I've ever seen. If you're ever in St. Louis, you must go...with kids or no kids!

After the museum we visited The Cupcakery for an afternoon treat and drove by The Gateway Arch on the way to the airport to drop Lucy off...

On Friday, Karen and I ran a bunch of errands with Caroline and put the finishing touches on Carol's room. It really turned out cute!




On Friday night, we ate St. Louis style pizza at Rigazzi's on "The Hill" and had dessert at Ted Drewes Frozen Custard. It was delicious...a perfect way to end our time in St. Louis! After a few tears this morning, Karen and I flew back to Dallas and left our dear Carol in St. Louis to start this exciting new chapter in her life. We are so proud of you Caroline!!!! We can't wait to "meet you in St. Louis" again soon! WE LOVE YOU!!!!!

St. Louis Bound!

Tomorrow morning at 7am the four of us (me, Caroline, Karen and Lucy) are headed to St. Louis to get our "Sweet Caroline" settled into her new life before she starts school at Covenant Seminary. We'll be cruisin' in a U-Haul and Caroline's car....2 of us in the U-Haul and 2 in Carol's car. I've heard that I've got the first shift driving the U-Haul! Please pray that we make it safely to St. Louis!! After we get Carol moved into her new place, we're going to enjoy the city together...we've got a long list of places to see and things to do, including a Cardinals game! Lucy has to fly back to Dallas on Thursday for work....Karen and I are flying back on Saturday. We are going to miss Caroline so much! Big D won't be the same without her in it! St. Louis....get ready...Caroline is coming to town!

Both baby and mom are doing fantastic! They are scheduled to come home tomorrow. Karen, Alison and I had a nice visit with them this morning....it was so fun to finally meet baby Owen! Ending in Istanbul....

Istanbul, Turkey was our last stop on the Journeys of Paul trip. We definitely went out with a bang...Istanbul was incredible! None of us really knew what to expect from this city, but I must say, we were all blown away and wished we had more time to spend there. I'm going to start this post with pictures of our room on our ship, The Star Clipper. I snapped a few pics of our cabin on the last night before we starting packing our things. The next morning, we woke up along the majestic shores of Istanbul....

We woke up at 6am on our last morning aboard The Star Clipper to see the sun rise over the city of Istanbul...

It was well worth it....is God good or what?!

99% of the people who live in Turkey are Muslim....there are more than 3000 mosques in Istanbul alone. The Blue Mosque is still a "working" mosque, so non-Muslims are not allowed inside during the 5 half hour daily prayers....the prayers are announced over an intercom from the minarets. The Blue Mosque has 6 minarets.

Only men are allowed to pray in the main area of the mosque....there is a small section in the back designated for women. Most women pray at home.

Of course Josh thought it was appropriate to cleanse himself....

The Hagia Sophia was the earliest of Istanbul's churches. It was converted into a mosque in 1453 and into a museum in 1935. The four minaret, one on each corner of the building, were added at various times during the Ottoman period.

It was absolutely amazing inside....again, the pictures just don't do it justice.

The Grand Bazaar.....I've never seen so many people in one place before. The was shopping for miles! Fortunately, we had a couple of hours to spend here!

Well, there you have it....our incredible trip has come to an end. I hope you've enjoyed the journey through pictures! I will forever be grateful for the 2 weeks we spent in Greece and Turkey. It was the most amazing trip...and even better that I got to experience it with my precious family. The memories we made together will always hold a special place in my heart. A very special thanks to my incredible momma for making it possible. We love you so much!!
