If you have some easy, weeknight meals...please share! I'd love to know your go-to recipes. I still dread sitting down to meal plan...surely it gets easier, right? It's like working out to me...dread it, but always feels good once it's done! :)

I made the southwestern egg rolls last week and Bryan and I really liked them. I just made quesadillas for the kids because they are not big fans of spicy food. The only issue I had was getting the tortillas to roll up nicely (I had to use corn because Bryan is gluten free). Maybe large flour ones will work out better :/
So impressed! Looks yummy. On the balsamic...definitely salt/pepper to taste. Brings out the flavor. :). Hope it turns out!
Not sure if you use a crockpot, but I find that to be the easiest week night meals with a toddler running around. I throw it all in during nap time and by dinner, it's ready! For the Southwestern Egg Rolls, I used large flour tortillas and did not have a problem with them rolling up (or staying rolled up). I also chopped up the chicken really fine after it cooked and then returned it to the pan to add all the other ingredients. I have not made a special dipping sauce for them. I just dip them in Ranch and salsa...delicious!
Mindy I have all of the recipes that I use regularly, about 40, written down in a notebook. Just the name, not the entire recipe. I have them separated into categories (white meat, red meat, crock pot, meatless etc). When I plan meals for the week i just go through that list and pull a couple of them. About every other week I'll try a new one from pinterest too. In that same notebook I will write our each day by week. I can see that on say this Wed. I will be busy all morning with a meeting so a crockpot meal that night would be best. Tuesday Jake is at school so I will have more time that day to prep a more intensive meal. We have life group and soccer practice on Thursday nights so that is always our night to eat leftovers. Hope this helps!
